Biltong: the perfect carnivore snack

Wet vs dry, wagyu vs grass-fed, and the rules for buying biltong on a strict-meat diet.

Biltong is air-dried, cured meat - no sugar, no nitrates in the traditional Cape recipe. It's the original South African protein bar.

Wet biltong (still moist inside) is more forgiving for new customers. Dry biltong is denser and lasts longer in the pantry.

Stick to 100g servings. Biltong is calorie-dense and easy to overeat - especially while working from home.
